4 Classic Cocktails to Make: White Rum Edition

Guess what? Me and @rachesblogs have been back at the cocktails.
This week, we decided to go tropical and try some white rum.
The results, if I do say so myself, weren’t too bad.
Much like the ‘Gin Cocktails’ blog, I won’t bore you with a big silly intro. We both know it’s all about the booze…
Mojito:
Probably the most famous white rum cocktail out there, it’s also one of the tastiest. Drink this on the balcony during a summer thunderstorm for that true Caribbean feeling.

50ml white rum, straight into a glass
2 teaspoons of sugar
A few wedges of lime
A handful of mint leaves
Mash it all together in the bottom of the glass. I mean reaaaallly crush it up.
Stir the messy paste-thing you’ve created.
Add crushed ice to the glass.
Top up with soda (sparkling) water.
Garnish with a sprig of mint.
(Tip: you can add strawberries during the ‘mashing’ stage to make a Strawberry Mojito. @racgesblogs fave.)

Strawberry Daiquiri:
Girly, pink, fruity. It’s a good one, chaps.

50ml white rum straight into a blender
25ml simple syrup
25ml lime juice
Handful of strawberries (no exact science here, just however many you’d like.)
Loads of ice
Blend it all up until smooth
Pour into a fancy glass (needs to be a fancy one), and garnish with a strawberry
Pina Colada:
If you like getting caught in the rain…

50ml white rum straight into a blender
125ml pineapple juice
50ml coconut cream
A load of ice
Blend. Blend, bend, blend.
Pour into a glass and garnish with any fruit you want (it's supposed to be pineapple, but we didn’t have any…)
Cuba Libre:
I know this is ‘technically’ just a rum and coke. But for a proper Cuba Libre, it’s all about the rum to coke ratio – as well as adding lime juice for that extra kick. A real Cuban classic.

Fill a glass with ice
50ml white rum
100ml coke
25ml lime juice
Garnish with a 4 lime wedges
